Arugula Cherry and Goat Cheese Salad

No complicated recipe needed! Simply toss a handful of fresh arugula leaves or a mixture of greens with arugula, a generous amount of sweet cherries (pitted and halved), crumble some tangy goat cheese on top (use feta if you prefer), and add some toasted, chopped almonds. Voilà! Your base salad is ready.

Want to add a touch of wholesome goodness? Sprinkle some cooked quinoa, or other grain of choice, over the top for an added delightful nutty texture!

While this Arugula Cherry and Goat Cheese Salad is a great standalone salad, it also plays well with others – especially proteins! For a heartier meal, consider adding grilled chicken or fish to the mix. The lightness of the salad beautifully complements the richness of the proteins, creating a well-balanced and satisfying meal. A perfect light summer meal. 

This salad is a nutritional powerhouse. Arugula is rich in vitamins A and K, while cherries bring a burst of antioxidants. Goat cheese adds a dose of protein and calcium, nuts for added protein, and if you decide to include quinoa, you'll enjoy a protein-packed, gluten-free grain that's easy on your digestion. Serves 2-4 people, depending on salad sizes and if using as a main or side salad. 

Ingredients

 1 6 oz bag arugula, or mixed greens and arugula mixture
 1 cup cherries, pitted and halved (about 16)
 2 oz goat cheese, crumbled (use feta if you prefer)
 ¼ cup almonds, unsalted and toasted
 1 cup quinoa, prepared (optional)
Vinaigrette Dressing
 4 tbsp Balsamic vinegar
 3 tbsp extra virgin olive oil
 1 tbsp honey
 2 tsp dijon mustard
 flaky salt and fresh ground pepper

Directions

In a small bowl, start building the vinaigrette. Add the Dijon mustard, balsamic vinegar, and honey to bowl and whisk together. While whisking, slowly add in the olive oil. Sprinkle with salt and ground pepper and set vinaigrette aside.

Place the greens in a large salad bowl. Add the halved cherries, goat cheese crumbles, almonds, and quinoa (if desired) to the bowl. Spoon the vinaigrette dressing over as desired, toss, adding more if needed. Enjoy!
