Asian Peanut Noodles

This makes for a super simple busy weeknight dinner. Chances are you already have most, if not all, of these ingredients on-hand in your pantry.  Add in whatever veggie combination you like and for an even easier recipe you can use pre-chopped veggies. Feel free to add in cooked chicken (a great time to use up that leftover rotisserie chicken), shrimp or tofu or simply keep it meat-free. Next day leftovers, eaten cold or reheated, are just as good!   

Ingredients

 8 oz Rice Udon Noodles (spaghetti noodles can also be used)
Sauce
 2 tbsp peanut butter (unsalted, sugar free)
 1 tbsp sesame oil
 1 tbsp Tamari or soy sauce
 1 tbsp rice vinegar
 1 tsp honey
 2 cloves garlic, minced
 1 tsp ginger, finely grated
Veggies and Garnish
 1 cup cooked edamame (shelled)
 1 cup cucumber, chopped
 1 cup shredded carrots
 1 red or orange bell pepper, thinly sliced
 2 green onions, sliced
 unsalted peanuts
 sesame seeds
 lime wedges

Directions

Whisk peanut sauce ingredients all together in a small bowl. Set aside.

Cook the noodles in a large pot of salted boiling water until cooked al dente. Drain the noodles, reserving a small amount (1/4 c) of the pasta water (to loosen the noodles and sauce if needed), and add to a large bowl.

Add the sauce to the noodles, stirring to combine. Loosen with some of the reserved pasta water, if needed. Add the edamame and other vegetables to the noodles and toss. Garnish with sliced onions, peanuts, sesame seeds, and lime wedges.
