Beef Kebabs with Tzatziki

A simple marinade is all you need (well that, and a little time for the marinade to work!) for these healthy, easy beef Kebabs with Tzatziki Sauce.  Keep dinner light and simple and serve alongside a salad or add the kebabs to a bed of seasoned rice for a more filling dinner.  It's easy to freshen your rice up a notch by simply stirring in a squeeze of fresh lemon juice and chopped fresh parsley or for another option try a squeeze of lime juice and chopped cilantro. Your taste buds will appreciate the fresh change from just plain 'ole rice!  

Note: If you love grilled veggies, add some chopped grilled peppers and onions onto some skewers and grill those up too. Our preference is to skewer those separately and grill separately so that the veggies don't overcook while waiting on the meat to finish cooking. 

The tzaziki sauce adds a nice touch, but is not a necessity. Find the recipe here for  Tzatziki Sauce

 

 

Ingredients

 1 ½ lbs thick- cut sirloin steak
 3 tbsp extra-virgin olive oil
 1 tbsp garlic, minced or pressed
 ½ lemon, squeezed
 1 tbsp dried oregano
 1 tbsp fresh parsley, chopped
 flaky salt and fresh ground pepper

Directions

Chop the steak into 1-inch pieces and set aside. Combine the oil, garlic, lemon juice, oregano, parsley, salt and pepper, stirring to combine. Combine the steak and marinade into a large zip-loc bag, pressing as much as the air out of the bag as you can, and seal. Chill for 1 hour or longer, up to 24 hours (the longer, the more tender and flavorful).

When ready to cook your kebabs, thread the steak pieces onto metal skewers (or use wooden skewers that have been soaked in water) and discard the marinade. Preheat the grill to medium-high heat. Grill kebabs for 7-10 minutes, rotating every 2-3 minutes to cook evenly, to desired doneness. You can also cook these on an indoor grill pan or in an oven as well. Remove from the heat.

Serve immediately with other accompaniments.
