Bok Choy and Mushroom Stir Fry

Bok choy is a favorite vegetable here.  This is a recipe for a simple and delicious weekday dinner. Chicken is a great addition to this dish or simply keep as is, meat-free. Tofu is excellent too. 

Ideally, baby bok choy that is about 5" works best. You probably need to run to an Asian market to find this, but if all you can find is larger heads of bok choy at your local store or farmers market, that’s totally fine too. The tender mushrooms and crisp bok choy are brought together with a easy to make garlicky brown sauce. Serve it as a main course over riced cauliflower or steamed rice. 

Ingredients

 3 tbsp soy sauce or tamari
 2 tbsp oyster sauce
 3 cloves garlic, minced or pressed
 1 tbsp honey
 ¼ tsp red pepper flakes
 1 lb baby bok choy or large head
 1 lb brown mushrooms, quartered
 sesame oil
 sesame seeds for garnish
 2 chicken breasts (if adding chicken to this dish)
 1 package cauliflower rice (or rice of choice)

Directions

Slice the ends off the bok choy (if using baby bok choy, you may not have much to slice off). If using baby bok choy you shouldn't have outer leaves to be discarded but if using larger heads, you can easily tear off any leaves needing to be discarded. Halve the core lengthwise. If using a large head, further cut the white part of the outer leaves into bite-size pieces. If using the small heads this step isn't necessary.

Mix the soy sauce, oyster sauce, honey, garlic, and red pepper flakes together. Let sit to combine flavors briefly, while preparing your cauliflower rice or rice of your choice.

Heat the sesame oil in a large pan over medium heat. Add the mushrooms and the boy choy, sautéing gently for 1-2 minutes. Turn the heat to low, and pour the marinade over the vegetables. Simmer for another 2 minutes, making sure the bok choy doesn't overcook. Remove the vegetables from the pan and place into a large bowl. (If adding chicken to this dish, add a little more sesame oil to the pan and cook the chicken breasts in the pan for 3-4 minutes on each side making sure they are cooked through before removing from the heat. Slice the chicken into strips.)

To serve, spoon cauliflower rice or alternative into a shallow bowl. Spoon the vegetable stir fry over top. Garnish with sesame seeds.

Add Sambal (chili paste) for some added heat, if desired.
