Burrata Tomato Salad with Shallot Vinaigrette

Ingredients

 2 heirloom tomatoes, sliced
 1 - 2 balls of Burrata cheese (depending of serving size)
 1 avocado, sliced
 1 head Boston lettuce (or more depending on size) core removed and washed and dried
 flaky Maldon Salt and fresh ground pepper
Shallot Vinaigrette Dressing
 ¼ cup extra virgin olive oil
 1 lemon, zested and juiced
 ½ shallot, diced
 1 garlic clove, grated or minced
 1 tsp dijon mustard
 sea salt and fresh ground pepper

Directions

In a small bowl, start building the vinaigrette. Add the lemon juice and zest, shallot, garlic, and Dijon mustard to bowl and whisk together. While whisking, slowly add in the olive oil. Sprinkle with salt and ground pepper and set vinaigrette aside.

Leave the Boston lettuce leaves whole (for presentation) and place in a large salad bowl or on a large plate. Layer the tomatoes and then the avocado slices. Tear apart the burrata gently and place on top. Sprinkle over top with a little flaky salt and fresh ground pepper. Spoon the vinaigrette dressing over, as desired.
