Asian Chicken Lettuce Wraps

This is a light meal. Make sure you double this recipe if you have any big eaters or just so you're fully prepared because they're really good! 

Feel free to add in extra veggies for added nutrition and crunch.  Fresh bok choy is delicious added in! 

Ingredients

 1 tbsp grapeseed or extra-virgin olive oil
 1 lb ground chicken
 3 cloves garlic, minced
 1 medium yellow or white onion, diced
 1 tbsp ginger, finely grated
 ¼ cup hoisin sauce
 3 tbsp soy sauce
 2 tbsp rice wine vinegar
 1 tbsp Sriracha sauce (optional)
 3 green onions, thinly sliced
 1 head butter lettuce (or Bibb)

Directions

In a skillet over medium-high heat, heat the oil. Add ground chicken and cook until browned, about 5 minutes, making sure to crumble the chicken as it cooks. Drain any excess fat from the pan.

Stir in the garlic, onion, ginger, hoisin sauce, soy sauce, rice wine vinegar, and Sriracha into the cooked chicken, until the onions become translucent, around 2-3 minutes.

Stir the green onions in until tender, about 1-2 minutes.  Drizzle a small amount of extra hoisin over the lettuce cups before serving.

  1. Made the Asian Chicken Lettuce Wraps for the family and received rave reviews across the board. I used to make a different recipe and wanted to again but did not want to go through the work of getting all the various spices for that recipe. This was super simple, can be tweaked easily and tasted great.
