Coconut Chia Pudding

It really doesn't get much easier than this, for this 3-Ingredient Coconut Chia Pudding.  Make sure you give it at least 2-3 hours for the chia seeds to have adequate time to gel and expand. Even better, make it the night before to wake up to a super easy breakfast. This also makes for a simple and easy, healthy dessert to satisfy the sweet tooth. I like to make extra to have on hand for the week to satisfy the sweet tooth whenever needed.  With super sweet summer fruit you shouldn't need any additional sweeteners, but feel free to drizzle with honey if desired.   This is really good with fresh strawberries, but feel free to switch it up and try different fruits out. Raspberries or mangos are also delicious!   Garnish with some granola, coconut flakes, chopped nuts, if desired. 

Chia seeds are high in omega-3 fatty acids and are an excellent source of fiber, which can improve heart health, reduce cholesterol levels and promote intestinal health.  Remember to drink plenty of water when eating chia, being high in fiber.    

 

 

Ingredients

 1 cup unsweetened coconut milk
 4 tbsp chia seeds
 1 cup diced fresh fruit (strawberries, mango, raspberries, etc) divided

Directions

Mix chia seeds with coconut milk. Refrigerate for at least 2-3 hours. Divide the fruit, placing 1/2 of it in the bottom of two glasses. Spoon the chia pudding into the glasses. Top with the remaining fruit.

Drizzle honey on top if desired.
