Easy Chicken Piccata

Tender chicken, lightly pan fried until golden and served with a phenomenal flavorful sauce made with lemon juice, stock, and capers. Chicken piccata is an Italian-American staple loved for its tangy flavors cradled in a silky, butter-rich pan sauce.  This recipe version is lighter than the traditional piccata, using less butter and oil but doesn't skimp on flavor whatsoever.  It surprisingly cooks up very easily. Perfect for a busy weeknight meal but also worthy of entertaining company. Traditionally its served with a starch — pasta, rice, polenta or white beans to soak up the sauce, and a green vegetable. Feel free to serve it just like that or it's also delicious served with just a simple side salad to really keep things on the light side.

Ingredients

 2 skinless, boneless chicken breasts; butterflied then cut horizontally (to make cutlets)
 ¼ cup all-purpose flour for dredging (gluten-free, if preferred)
 2 tbsp extra-virgin olive oil (as needed, for cooking)
 1 shallot, peeled and cut lengthwise
 1 lemon, halved (half juiced, about 2 TBSP; half thinly sliced with seeds removed)
 1 cup chicken stock
 2 tbsp butter
 1 tbsp capers, drained (add more, if desired)
 flaky salt and fresh ground pepper

Directions

Lightly season both sides of the chicken with salt. Place the flour in a shallow bowl and dredge the chicken in the flour, shaking off any excess. Let coated chicken rest on a plate or cutting board while you begin cooking process.

In a large skillet over medium-high heat, heat a TBSP of the olive oil. Add the chicken and sauté until golden and cooked through, about 3 minutes per side working in batches if necessary, to avoid crowding. Remove the chicken to a plate once cooked. Repeat with the remaining chicken pieces, making sure to add more oil if needed.

Once the chicken is cooked add the shallot and lemon slices to the pan and sauté, stirring occasionally, until lightly browned and fragrant, around 2 - 3 minutes. Add the stock. Simmer until reduced by half, around 4 minutes or so.

Reduce the heat to low, stir in the butter, capers and lemon juice. Taste test and season with salt and pepper as needed. Serve the chicken with the sauce poured over the top.
