Easy Lemon Feta Salad

This salad is easy as can be and always gets the "can you please send me that recipe?" or "will you bring that salad?" feedback. Delicious as is, but also extremely versatile so feel free to add in anything your heart desires. It is an easy weeknight dinner to throw together. Pick up a rotisserie chicken to go with it or simply leave and enjoy as is. You can throw in leftover veggies (cauliflower, zucchini) or add in any seasonal vegetable.  The hardest part to making this salad is honestly just making sure your almonds don't burn!   As easy as this salad is, it also makes a great accompaniment for a nicer weekend meal or as a side to a big holiday feast! 

Some people like it more lemony than others, so I always start with 1/2 the juice and then add in more as needed. Also, because lemons very in size!  This salad is basic and easy, but so delicious. Feel free to add in additions if you like.  

This recipe feeds 4 so feel free to cut the recipe in half.  

Ingredients

Dressing
 3 tbsp extra-virgin olive oil
 1 large lemon, juiced
Salad
 2 green onions, sliced thinly (or 1/2 shallot, diced)
 ½ cup unsalted almonds (sliced, slivered, or whole and coarsely chopped)
 4 oz feta cheese, crumbled
 1 small container Spring Mix (mixed greens) salad greens
 garnishes, dried unsweet cherries or cranberries if desired, or any other additions such as roasted veggies, avocado, sliced radishes, etc)

Directions

Place salad greens into a salad bowl. Add sliced green onions and crumbled feta on top, to the middle of the greens in the salad bowl. Pour the lemon juice over the crumbled feta and onions, adding 1/2 the juice first, and then more as desired

In a small skillet over medium heat add the olive oil to the pan. Once heated, add the almonds to the pan and stir occasionally until slightly browned, making sure they don't burn. Remove the pan from the heat, spoon the almonds and oil directly over the feta cheese in the salad bowl. You'll hear the sizzle!
Keep this salad basic and toss and serve, or add any additional ingredients you desire (roasted chicken, avocado, cherries, roasted veggies, etc.).

Serve immediately.
