Flax Pudding

Ground flax is often considered better than whole seeds because the body can digest it more efficiently. Grinding flax seeds breaks down the tough outer shell, making the nutrients, particularly omega-3 fatty acids and fiber, more accessible for absorption. You can buy flax already ground; just make sure to refrigerate it after opening to prolong its life.

Additionally, the ground seeds can be transformed into a simple flax pudding, similar to Chia pudding. Ingredients

 ½ cup ground flax meal
 6 oz almond milk (or other plant-based milk)
 ¼ tsp pure vanilla extract
 ¼ tsp ground cinnamon
 1 tsp honey

Directions

Combine all ingredients (ground flax, almond milk, vanilla, cinnamon, and honey). Mix well and let it rest for at least 30 minutes in the refrigerator.

Divide and spoon into small bowls.

Enjoy it on its own, topped with fresh berries, or fold into a Greek yogurt parfait.
