Ingredients

 2 heirloom tomatoes, sliced
 1 or 2 balls Burrata cheese, dried off and sliced
 8 cherry tomatoes, halved
Pesto Ingredients
 2 cups fresh basil leaves (stems removed and packed down)
 2 tbsp pine nuts
 2 cloves garlic
 ½ cup extra virgin olive oil
 ½ cup parmesan, finely grated
 flaky salt and ground pepper

Directions

Combine basil leaves, pine nuts and garlic cloves in a food processor until finely minced.
With the food processor running, slowly drizzle in olive oil and process until the mixture is smooth. Add the grated cheese and mix just long enough to combine them. Add salt and freshly ground pepper to taste. The pesto can be made in advance and stored or made just before using.

Dry off the burrata balls with a paper towel. On a large plate, arrange the large tomato slices and the cherry tomatoes. Top with torn pieces of burrata cheese. Season with salt and pepper and drizzle with the fresh pesto.

Serve as is, or with slices of toasted baguette.
