Green Goddess Cobb Salad

Cobb salad is a classic American salad that is known for its hearty and flavorful combination of ingredients. It was named after its creator, Robert H. Cobb, who owned the famous Brown Derby restaurant in Hollywood, California, where the salad was first served in the 1930s. The traditional Cobb salad typically includes lettuce, grilled or roasted chicken, bacon, hard-boiled eggs, avocado, blue cheese, and onions. The salad is usually arranged in rows or sections on a large plate or bowl, with each ingredient being placed separately on top of the lettuce. The presentation showcases the colorful components of the salad. Common salad dressings typically include vinaigrettes, ranch dressing, or the classic Green Goddess dressing, which of course, is our favorite!

Ingredients

 1 full chicken breast (cut into 4 cutlets)
 2 eggs, hard-boiled
 6 slices turkey bacon
 1 large head Boston lettuce (may need more depending on portion desired)
 16 cherry tomatoes, halved
 ¼ small red onion, sliced thin
 4 oz blue cheese crumbles
 sea salt and fresh ground pepper

Directions

Prepare the Green Goddess Dressing first and place in the refrigerator until the salad is assembled. Next, prep the grilled chicken, hard-boiled eggs and bacon. Heat a grill or grill pan to medium heat. Lightly salt and pepper the chicken cutlets. Grill the chicken. Remove to a plate and slice when cooled slightly. Hard-boil the eggs. Cook the turkey bacon according to package directions. (I find the quickest and easiest method for clean-up is to cook turkey bacon on a small baking sheet with parchment paper and cook in a toaster oven or regular oven). Crumble the bacon into pieces once cooled slightly. Peel and cut the eggs into quarters.

Assemble the salad by layering the greens, red onions, tomatoes, blue cheese, and bacon. Spoon the Goddess Dressing over the salad, until covered to your liking.
