Grilled Fish Tacos with Peach Salsa

Ingredients

FOR THE CABBAGE SLAW
 1 cup red cabbage, thinly sliced
 ½ lime, juiced
 ¼ tsp cumin
FOR THE SALSA
 1 cup fresh peaches, chopped small
 ¾ cup red pepper, chopped small
 ¼ cup red onion, diced
 ½ jalapeño, seeded and diced
 2 tbsp cilantro, minced
 1 tbsp mint, minced
 1 lime, juiced
 flaky sea salt
FOR THE FISH
 4 (6 oz approx) snapper fillets (or other white, flaky fish)
 2 tbsp extra virgin olive oil
 flaky sea salt
ADDITIONAL ACCOMPANIMENTS
 corn tortillas, sour cream, avocado, hot sauce

Directions

FOR THE CABBAGE SLAW

Add the sliced cabbage, lime juice and cumin to a small mixing bowl and stir to mix. Set aside while you prepare the salsa, fish and toppings.

FOR THE SALSA

Combine the peaches, red pepper, onion, jalapeño, cilantro, mint, and lime juice in a mixing bowl and add a small amount of seat salt. Stir to combine. Add more diced jalapeño, if desired, for extra heat.

FOR THE FISH

Heat a grill or grill pan over high heat. Coat the fish with the olive oil and sprinkle with the salt. Grill for approximately 3-4 minutes on each side, depending on the thickness of the fish, until firm to the touch and browned. Remove to a plate.

Serve the fish with the peach salsa, tortillas and other toppings and accompaniments.
