Grilled Lamb Burgers with Tzatziki Sauce

The star of this burger is really the Tzatziki sauce. Delicious on everything, from grilled veggies to salmon to anything in between. The burgers have so much flavor you won’t miss the bun if you do decide to skip it. Serve atop a big bed of chopped greens, grilled veggies, tomatoes and feta cheese for a lighter option! 

Ingredients

Sauce
 1 cup whole milk unflavored Greek Yogurt
  english cucumber, finely grated
 1 clove garlic, minced or pressed
 ½ lemon, juiced
 1 tbsp white vinegar
 1 tbsp finely chopped parsley
 flaky salt and ground pepper to taste
Burgers
 1 tbsp Extra- virgin olive oil
 1 ½ lbs ground lamb
 1 red onion (half diced, other half sliced thinly for garnish)
 2 cloves garlic, minced or pressed
 2 tbsp fresh mint, finely chopped
 zest of half lemon
 4 brioche buns or pitas
 sliced tomatoes, for garnish

Directions

Heat olive oil in a small pan, set to medium heat. Add in the onions. Season with salt. Cook the onions for 3 to 4 minutes. Add the garlic and cook for 2 more minutes. Turn the heat off and let cool.

In a large bowl, combine the lamb, the cooled onion mixture, the mint, lemon zest and 1/4 cup water. Sprinkle with salt and combine well.

Preheat the grill to medium high. Form the lamb mixture into 4 equal patties. Grill the burgers for 4 to 5 minutes per side, for medium-rare. Temperature should be around 145°. Remove the burgers from the grill and let rest for 3 to 4 minutes.

Schmear each half of bun or pita generously with the Tzatziki sauce. Top one half with a burger, then tomatoes, then sliced onions.
