Grilled Peach Goat Cheese Crostini

Peaches offer numerous health benefits, making them a delicious and nutritious addition to any diet. They are packed with essential vitamins and minerals, including vitamin C, vitamin A, and potassium, which support a healthy immune system, promote good vision, and help regulate blood pressure. Peaches are also rich in dietary fiber. Their natural antioxidants contribute to reducing inflammation and protecting against chronic diseases. Furthermore, the high water content in peaches helps keep the body hydrated and supports healthy skin.

Obviously peaches are delicious as is, and for optimum nutritional values, best eaten uncooked. But if you’ve never grilled peaches before and if you're looking for a delicious and easy starter, now’s the time! Grilled Peaches can easily up any recipe by adding a carmelized flavor to their natural sweetness. If you don't have access to a grill, using a broiler or a grill pan will achieve similar results. Resist moving them around on the grill until they get a good sear (about 3 – 4 minutes) so that they release cleanly when you flip them over. After another couple minutes on the other side, they’re done. Err on the side of undercooking. Al dente, rather than mush. If you're not a fan of goat cheese, you can use whipped Ricotta or whipped Feta instead.

Ingredients

 2 ripe peaches
 5 oz goat cheese
 honey, spicy or regular
 basil leaves
 sourdough baguette, sliced 1/2 inch thick

Directions

Heat a grill or grill pan to medium-high heat. Slice the peaches in half and remove the pits. Use a paring knife to remove the pit entirely, if needed. Lightly brush cut peach halves with olive oil.

Lay peaches cut side down on the grill. Cook for around 3 - 4 minutes, until they develop grill marks and are slightly softened. Be careful to not overcook. Use tongs to flip over and cook for an additional 2 minutes. Transfer to a plate and let them cool slightly before slicing.

Lightly brush or spray the baguette slices with olive oil (optional). Place the bread slices on the grill or under the broiler and toast lightly.

Spread a layer of goat cheese to each baguette slice, then add a slice of peach, followed by a basil leaf, and finally, a drizzle of honey.
