Grilled Peach Salad

Grilling peaches adds a wonderful depth of flavor and brings out their natural sweetness while imparting a slightly smoky taste. Ingredients

 1 bag spinach (arugula or Boston lettuce would also be good)
 2 peaches, halved and grilled then sliced
 1 avocado, pitted and chopped
  cup almonds (unsalted) toasted
 ¼ red onion, sliced thin
 4 oz goat cheese (log), large dollops crumbled onto salad
 fresh basil leaves, sliced
Vinaigrette
 3 tbsp champagne vinegar
 3 tbsp Extra-virgin olive oil
 1 garlic clove, pressed or minced
 1 tsp dijon mustard
 sea salt and fresh ground pepper

Directions

In a small bowl, build the vinaigrette. Whisk oil, vinegar, garlic, dijon, a sprinkle of flaky salt, and ground pepper; and set vinaigrette aside.

Assemble the salad by layering the spinach, peaches, avocado, almonds, and onion slices in a large salad bowl. Place dollops of goat cheese over the salad, along with the fresh basil slices. Spoon vinaigrette over the salad until desired coverage.
