Grilled Snapper

This is a quick and easy recipe for grilled or pan-seared fish. You'll have dinner ready in no time! Serve alongside your favorite accompaniments, like a side salad for a light meal or with a side black beans and rice as well, if wanting something more. A delicious, simple, heart-healthy meal! 

Fresh fish or seafood shouldn't have to be heavily seasoned to taste good. If the fish is good and fresh, it doesn't require a whole lot. For this dish, I just lightly sprinkle some cumin and coriander over the Vermillion Snapper fillets and then a squeeze of fresh lemon juice at the finish to top it off and complement it's fresh flavor.

Note:  Fish Sliders are another option for this recipe.  Served on a small brioche bun and topped with your favorite garnishes and an herbed mayo (or simply with hot sauce) is always a hit - especially for kids!  

 

Ingredients

 1 lb snapper filets, skin on (about 4 filets)
 ½ tsp ground cumin
 ½ tsp ground coriander
 ¼ tsp sea salt
 1 lemon, cut into wedges
 1 tbsp extra-virgin olive oil for cooking

Directions

Pat fish fillets dry with a paper towel. In a small bowl mix together the cumin, coriander and salt and sprinkle sparingly onto the fish.

In a large skillet or grill pan heat 1 tablespoon oil over medium-high heat. Add the fish and cook until fish flakes easily with a fork, about 3 minutes per side. Remove from the heat and plate. Squeeze a lemon wedge over the filets.

Serve with desired accompaniments and enjoy!
