Guacamole

Avocados are considered a superfood because they are packed with nutrients that provide numerous health benefits. Here are some of the ways avocados are good for you.  
  • They're rich in healthy fats: Avocados are high in monounsaturated and polyunsaturated fats, which can help reduce cholesterol levels, lower the risk of heart disease, and improve brain function.
  • High in fiber: Avocados are a good source of dietary fiber, which can help improve digestion, promote regular bowel movements, and reduce the risk of certain diseases such as diabetes.
  • Packed with vitamins and minerals: Avocados are rich in vitamins C, E, K, and B6, as well as minerals such as potassium, magnesium, and folate. These nutrients are essential for maintaining good health and preventing diseases.
  • May help with weight management: Despite being high in fat, studies have shown that avocados may help with weight management as they can help reduce appetite and improve feelings of fullness.
  • May have anti-inflammatory properties: Avocados contain antioxidants and anti-inflammatory compounds that may help reduce the risk of chronic diseases such as cancer, arthritis, and heart disease.

This Guacamole recipe is absolutely delicious and a great way to add more avocados into your diet.  There are the other nutritional components packed in as well, from the other vegetables and the cumin incorporated.  This really is a superfood dip, when you think about it! 
 
You can use sliced veggies (radishes, cucumber, celery, etc) to scoop the guacamole instead of chips, or along with, for a lighter, healthier choice and to make sure you are getting your daily veggie quota.    
 

Ingredients

 3 avocados, seeded and lightly mashed
 1 fresh lime, juiced
 3 tbsp red onion, diced
 2 tbsp jalapeño, seeded and diced
 2 tbsp cilantro, chopped
 1 tbsp sour cream or plain full fat greek yogurt
 8 cherry tomatoes, quartered
 ¼ tsp cumin, ground
 ¼ tsp flaky sea salt, such as Maldon

Directions

Add 3 scooped avocados and the lime juice to a bowl, lightly mash with the backside of a fork. Stir in the red onion, jalapeños, cilantro, and sour cream or Greek yogurt and mix well. Add in the salt and cumin and mix. Lastly, add in the diced cherry tomatoes and gently mix. Taste test and add more salt, cumin, or lime juice, if needed.

Depending on the size of your avocados you may need to adjust your seasonings.

Serve with a medley of sliced veggies and tortilla chips and enjoy!
