Healthy Chocolate Pudding

My mom first introduced me to a version of this pudding during my college years, and at first, this recipe sounded unconventional – avocado in chocolate pudding? One taste was all it took to win me over. The creamy texture and authentic chocolate flavor blew me away. I've always loved chocolate pudding, and I appreciate being able to enjoy it without all the sugar that's traditionally in pudding, while also benefiting from the added nutrients. Avocado takes the spotlight, lending creamy richness and healthy fats, while ripe bananas provide much of the sweetness. Combined with antioxidant-packed cacao powder and vanilla extract, this pudding has both flavor and nutritional benefits. A hint of agave nectar or honey adds just the right amount of sweetness without compromising your health goals. It's important to remember that there's nothing wrong with indulging every now and then, but this recipe is perfect for those times when you choose to indulge healthily or need to reset after indulging too much.

Ingredients

 2 ripe bananas (1 frozen, 1 unfrozen)
 1 ripe avocado (pitted)
 2 tbsp unsweetened cacao powder
 2 tsp agave nectar or honey
 ¼ tsp pure vanilla extract
 raspberries or sliced strawberries (for garnish)

Directions

Add both bananas (one frozen, one unfrozen), avocado, cacao, and 1 tsp of agave or honey (you may not need the other tsp of sweetener, depending on the sweetness of the bananas). Add the vanilla and blend all ingredients in a Vitamix or another high-powered blender, using the tamper provided with your blender to gently push down ingredients while blending. If the blender struggles to mix, you can add a teaspoon of water to loosen it slightly. Taste test and if needed, add the remaining teaspoon of honey or agave.

With a spoon and/or spatula, remove the pudding from the blender and distribute into small dessert bowls. Top with fresh raspberries or sliced strawberries.

Serving size is 3 to 4, depending on the portion size. Any unused portion can be stored in the fridge for up to three days, covered and sealed.
