Healthy Green Goddess Dressing

This healthy Green Goddess Dressing is easy, dreamy, creamy, and absolutely delicious!

Green Goddess dressing is a creamy salad dressing or sauce that is typically made with a base of mayonnaise or yogurt mixed with herbs, green ingredients, and other flavorings. It gets its name from its vibrant green color, which comes from the inclusion of fresh herbs. Common ingredients include fresh herbs, garlic and onion, lemon juice or vinegar, and Anchovies. Traditional Green Goddess dressing includes anchovies for their savory and umami flavor. However, some modern recipes omit them to make a vegetarian or vegan version. You get to decide whether to include them.  Personally, I am a big fan! 
Mayonnaise is commonly used in Green Goddess, but yogurt can be used as a lighter alternative and does provide healthier benefits. All the ingredients are typically blended together until smooth, resulting in a creamy, flavorful dressing with a vibrant green hue. Green Goddess dressing is versatile and can be used as a dip, salad dressing, or sauce for various dishes. It pairs well with salads, roasted vegetables, grilled meats, sandwiches, and more.   
 
This dressing is best fresh, but it does last refrigerated for a week. 

Ingredients

 1 cup Greek Yogurt (unflavored) Full Fat 5%
 ¼ cup green onion, sliced (white and green part)
 1 clove garlic, minced or pressed
 ½ tsp anchovy paste (or sub similar amount of anchovies)
 1 cup mixed combination of fresh herbs (basil, parsley, cilantro)
 ½ lemon, zested and juiced (may need more to taste)
 sea salt and fresh ground pepper

Directions

In a food processor or high-powered blender, combine the yogurt, onions, garlic, anchovy paste, mixed herbs, lemon juice, zest, salt and pepper. Pulse or blend until well combined. Add a small splash of water to loosen to make smoother, if necessary. Taste test and add more lemon juice or salt and pepper, if needed. Set aside to let flavors meld.
