Homemade Pesto

The best way to enjoy a bounty of fresh basil. It's delicious on pasta, pizza, sandwiches... quite possibly on everything. Β Β Keeps in the refrigerator for up to 5 days in an airtight container or can also be frozen.

Ingredients

 2 cups fresh basil leaves (no stems & packed)
 2 tbsp pine nuts (walnuts can also be used)
 2 large garlic cloves
 ½ cup good extra-virgin olive oil
 ½ cup freshly grated parmesan cheese
 flaky salt and fresh ground pepper

Directions

Combine basil leaves, pine nuts and garlic cloves in a food processor until finely minced.

With the food processor running, slowly drizzle in olive oil and process until the mixture is smooth. Add the grated cheese and mix just long enough to combine them. Add salt and freshly ground pepper to taste.
