Lemon Curd

We all have those moments when we yearn for our favorite desserts. In the summertime, it's definitely Lemon Meringue Pie for me. If Lemon Meringue Pie is your weakness, or simply one of your favorites too, I have a great solution – this guilt-free, no refined sugar, homemade Healthy Lemon Curd! Indulging in the sweet, tangy flavor of lemon doesn't have to derail your healthy eating goals. With this recipe, you can savor all the flavors while nourishing your body with wholesome ingredients. When those lemon meringue cravings hit, you can satisfy them with a dollop of this healthy lemon curd. It's perfect combined with unsweetened Greek yogurt, pancakes, or cottage cheese. 
Remember, this recipe is not only a delightful treat but also a way to nourish your body. With fresh lemon juice providing a dose of vitamin C and natural honey offering a healthier alternative, you can enjoy the taste you love without guilt. 

Ingredients

 3 large eggs
 ¼ cup raw honey
 ½ cup fresh lemon juice
 lemon zest, from 2 small or 1 large
 3 tbsp coconut oil (slightly warmed to soften, if solid)

Directions

In a medium-size saucepan, whisk the eggs, honey, and lemon zest together well, until smooth. Add in the lemon juice and coconut oil, whisking to combine.

Cook the lemon mixture over medium-low heat, whisking continuously until it thickens. This will take a little while, around 10-20 minutes.
 Once the curd has reached the desired level of thickness, remove from heat.

Let the curd cool slightly and then place into an airtight container with a lid. Store in the fridge
.

Will keep in an airtight container in the fridge for about a week (if it lasts that long!).
