Lemon Feta Chickpea Pasta Salad

This chickpea pasta salad is lighter than a traditional salad and is packed with protein, loaded with veggies and tons of flavor! This dish features a protein pasta, cherry tomatoes, peppers, green onions, artichokes with a delicious, tangy lemon dressing and feta cheese!  This meal is entirely vegetarian and filling on it’s own because of the protein from the chickpea pasta.  You can pair it with a lean protein like chicken or shrimp, if you prefer, or it's also delicious with grilled or hot-smoked salmon. Strips of salami goes great for a simple lunch pasta salad.  Of course, you can make this recipe with traditional wheat-based pasta noodles as well, if you don't care for gluten-free pasta or are just looking for a traditional pasta salad recipe. The flavor is bright and crisp, making for an ideal spring or summertime dish.  It's also a perfect dish if you want to meal prep in advance for lunches or dinner, as it doesn't require reheating and is actually just as delicious, if not more, the next day! Get ready, you'll be craving this recipe all spring and summer long it's THAT good! 

This dish feeds around 4 people if used as the main feature. If used as a side, it can feed between 6-8.  

Ingredients

Dressing
 6 tbsp extra-virgin olive oil
 4 tbsp fresh lemon juice
 2 tsp grated lemon zest
 2 tbsp dijon whole grain mustard
 2 garlic cloves, minced or pressed
Pasta
 1 lb dried pasta (regular or gluten-free) penne or other shape; such as Banza chickpea pasta
 1 cup small cherry tomatoes, halved
 1 ½ cups chopped red or orange bell peppers
 1 cup crumbled feta cheese
 1 cup chopped green onions
 1 cup artichoke hearts, drained from oil and cut into bite-size
 flaky salt and fresh ground pepper
 optional additions or garnishes include peppadew (piquanté) peppers, sliced salami, grilled chicken, whatever you choose

Directions

Dressing

Whisk oil, lemon juice, lemon zest, mustard, and garlic in a small bowl to blend together. Season the dressing with salt and freshly ground pepper to taste.

Pasta

Cook pasta in a large pot of boiling salted water until tender but still firm to bite. Drain.

Rinse pasta with cold water to cool and drain again. Transfer the pasta to a large bowl.

Add tomatoes, bell peppers, feta cheese, green onions and artichokes. Pour 1/2 the dressing over and toss. Taste test and add more dressing until desired coverage.

*Additions: Peppadew peppers, sliced salami, or grilled chicken, or whatever other additions/ garnishes you love.
