Ingredients

 ½ cup fresh-squeezed lemon juice (about 3-4 lemons)
 ½ cup water
 2 tbsp honey
 club soda or sparkling water
 mint sprigs

Directions

Roll the lemons on a hard surface to make them easier to juice. Cut the lemons in half and juice them using a citrus juicer or by squeezing them with your hands. You should aim for about 1/2 cup of lemon juice.

Add lemon juice, water and honey to a large measuring cup and stir. If your honey is crystalized, use warm water when mixing to dissolve. Taste the lemonade and adjust the sweetness or tartness by adding more sugar or lemon juice as desired.

Serve the lemonade in glasses. Add ice and 1/4 cup of the lemon juice. Top with club soda or sparkling water. Garnish with lemon slices and fresh mint leaves if desired.

Makes 4 cocktail glass-sized spritzers.
