Mango Coconut Overnight Oatmeal

Takes a few minutes to prepare in the evening but so worth it to have this Mango Coconut Oatmeal ready to go for breakfast the next morning!  Diced Mango makes this oatmeal so if you're a mango fan, you'll love this. It's refreshing and a nice change from having berries for breakfast.  You may certainly add more fruit to this if you choose, but the mango-coconut combo is delish!   Added hemp seeds and chia for some extra nutrients.  Add honey if you like it a little sweet but the mango is normally sweet enough that you shouldn't need it. 

This recipe is for two servings. Enjoy! 

Ingredients

 1 cup rolled oats, gluten-free or regular
 2 oz water
 6 oz coconut milk, unsweetened
 1 tbsp chia seeds
 1 tbsp hemp seeds
 diced mango
 ground cinnamon
 honey, if needed

Directions

Add the oats, coconut milk, water, chia, and hemp seeds to a large mason jar, bowl or measuring cup. Stir to combine. Add the diced mango to the top, along with a sprinkle of cinnamon and a drizzle of honey, if desired.

Leave to sit, refrigerated, overnight and enjoy in the morning. Best if eaten within 2 days.
