Melon and Mozzarella Salad

The fruits and vegetables at farmers' markets are typically harvested at peak ripeness, ensuring optimal flavor and quality. So while you might occasionally find a good melon at the grocery store, farmers' markets often can offer a superior selection of fresh, locally grown produce.  Additionally, shopping at farmers' markets allows you a chance to connect directly with the growers, and an opportunity to support the local agriculture. I much prefer to hit up the farmers' markets during its season over the typical grocery store visit for numerous reasons. The atmosphere, the freshness of the produce, and the opportunity to support our local farmers here in Charleston all make it an enjoyable experience. I feel so fortunate to have so many options for fresh produce and definitely don't take it for granted. When selecting a ripe cantaloupe for this recipe, for the freshest and sweetest flavor, be sure to select a sweet fragrant smelling melon. The sweeter it smells, the better. If any parts of the melon feel mushy to the touch it may be an overly ripe one. 

Using fresh fruits like cantaloupe in salads offers a unique touch, enriching them with bursts of flavor. This effortless dish requires just a few ingredients but packs a punch. This versatile dish isn't just a salad; it doubles as an appetizer as well, perfect for bite-sized party treats! Consider skewering the melon with mozzarella and fresh basil or fresh mint, and for an extra indulgence, a touch of prosciutto can be a nice addition either on the skewer or within the salad, but is definitely not a requirement. This one is a winner with its' looks and tastes!

Ingredients

 1 cantaloupe, halved and de-seeded
 8 oz medium-sized (Ciliegine) Mozzarella balls
 3 oz arugula
 4 basil leaves
 4 mint leaves
Dressing
 3 tbsp extra virgin olive oil
 1 tbsp champagne vinegar (white wine vinegar can be substituted)
 ¼ tsp crushed red pepper flakes
 sea salt and fresh ground pepper

Directions

In a small bowl, prepare the vinaigrette by whisking together vinegar while gradually drizzling in the olive oil to combine. Add the pepper flakes and season with a gentle sprinkle of salt and fresh ground pepper. Set dressing aside.

With the cantaloupe halved and seeds removed, use a melon baller to scoop out the flesh to create round balls. Drain the mozzarella balls (Ciliegine Mozzarella) if they are in liquid.

In a large salad bowl, combine the cantaloupe balls and mozzarella balls. Tear fresh mint and basil leaves and add them to the bowl. Add the arugula. Gently toss all the ingredients together to combine.

Spoon vinaigrette over the salad and serve.
