Mexican Turkey Chili

A nice twist to a traditional chili, packed with extra veggies for extra nutrients. 

Ingredients

 1 tbsp olive oil
 1 large yellow onion, chopped
 1 jalapeño, seeded and diced
 3 carrots, peeled and chopped
 3 garlic cloves, minced
 3 tbsp taco seasoning
 1 lb ground turkey
 3 tbsp Worcestershire sauce
 1 28 oz. can tomatoes, pureed (diced also works)
 2 ½ cups chicken or vegetable stock
 1 12 oz. lager beer (Modelo, for example)
 2 15 oz. cans pinto beans, drained and rinsed
 grated cheese, sliced green onions, sour cream and lime wedges for garnish

Directions

Heat olive oil and chopped onions in a large Dutch oven over medium heat and cook, stirring now and then, until softened, 5-7 minutes.

Add the jalapeño and carrots cooking for another 2 minutes. Add in the minced garlic and dried taco seasoning, cooking for 1 minute.

Add the ground turkey and cook breaking into little pieces, until cooked thoroughly, then add in all remaining ingredients, Worcestershire sauce thru the beans.

Simmer for at least an hour.

Garnish with grated cheese, chopped green onions, a dollop of sour cream and lime wedges.
