Ingredients

 7 cups mixed greens (spinach and spring mix)
 1 large orange, peel removed and cut into thin slices
 ½ small red onion, thinly sliced
 ½ cup pomegranate seeds
 ¼ cup crumbled gorgonzola cheese
 ½ cup toasted slivered almonds and pumpkin seeds
 cayenne pepper
Vinaigrette Dressing
 ¼ cup champagne vinegar
 2 tsp Dijon mustard
 1 tbsp shallot, diced
  cup extra virgin olive oil
 flaky salt and fresh ground pepper

Directions

In a small bowl, start building the vinaigrette. Add the vinegar, shallot, and Dijon mustard to bowl and whisk together. While whisking, slowly add in the olive oil. Add a pinch of salt and ground pepper and set vinaigrette aside.

Toast the almonds and pumpkin seeds in a dry, heavy skillet over medium heat for 2 - 3 minutes, stirring occasionally, until they're golden brown. Remove from the heat, add a dash of cayenne pepper to the mixture, stir again and remove from the heat.

Add the greens to a large salad bowl. Layer with the sliced oranges, onion slices, pomegranate seeds, toasted nut mixture, and gorgonzola. Drizzle the dressing over the salad mixture to taste and gently toss to coat. You may have dressing left over. Serve immediately.

Vinaigrette may be stored in a jar refrigerated for up to a week.
