Oven-Roasted Chicken Gyros with Tzatziki

Oven roasted chicken breasts are great because they’re so quick and easy, but baking chicken with the bone in and skin on adds extra flavor and keeps the chicken incredibly juicy. This roasted chicken breast recipe is going to make it seem like you put a whole lot more effort into cooking that you actually did!  These split chicken breasts are juicy and tender on the inside, with a delicious crispy, herb-crusted skin on the outside.   These Chicken Gyros come together so quickly because you can get all of your other things to go along prepared, as your chicken is cooking.  This chicken is delicious atop salad if you're just looking for a Greek Salad option, but equally as delicious as a Gyro, on naan topped with garnishes such as lettuce, tomatoes, feta and tzatziki.  Whatever combination you love.  A simple and delicious recipe for Tzatziki can be found by clicking here Tzatziki

Ingredients

 3 bone in, split chicken breasts
 extra-virgin olive oil, for cooking
 Jane's Crazy Mixed- Up Salt (or own mixture of salt, herbs and spices, onion and garlic)
 Serve with salad and naan bread + garnishes to include tomatoes, lettuce, tzatziki sauce (search on website for recipe)

Directions

Preheat oven or toaster oven to 350°. Place split chicken breast on a baking sheet, lined with tinfoil.
Drizzle a small amount of olive oil over the breasts. Sprinkle a small amount (about 1/4 tsp each) of the Jane's salt (or whatever mixture you use) over each breast. Place in oven and bake for 35 minutes or until chicken is just cooked through.

While the chicken is cooking, this is a good time to make a salad and get your garnished ready for your gyros. Remove the chicken from the oven and let cool down slightly before slicing and removing from the bone.

Serve sliced chicken breast meat on naan bread, garnished with lettuce and sliced tomatoes and topped with tzatziki sauce. Or serve sliced breast meat with simply a salad.
