Peach Salsa

Ingredients

 1 cup fresh peaches, chopped small
 ¾ cup red pepper, chopped small
 ¼ cup red onion, diced
 ½ jalapeño, seeded and diced (add more to desired heat level)
 2 tbsp cilantro, minced
 1 tbsp mint, diced
 1 lime, juiced
 flaky sea salt

Directions

Combine the peaches, red pepper, onion, jalapeño, cilantro, mint, and lime juice in a mixing bowl and add a small amount of seat salt. Stir to combine. Add more diced jalapeño, if desired, if extra heat preferred.

Can be served immediately or will stay fresh refrigerated for 2-3 days.
