Pickled Shrimp

Always a hit. Great to have on hand for easy lunches, apps and dinners. Keeps in the fridge for about a week! Β 

Number of servings will vary depending on serving size.Β 

Ingredients

 1 large sweet or Vidalia onion, thinly sliced
 1 lemon, thinly sliced
 1 cup apple cider vinegar
 ¼ cup grapeseed oil
 ¼ cup capers with juices
 ¾ tsp celery seeds
 ½ tsp sugar
 ½ tsp salt
 1 dash of hot sauce
 1 ½ lbs cooked & peeled shrimp

Directions

In a large bowl, stir to combine all ingredients except the shrimp.

Add the cooked shrimp to the mixture and toss to combine.

Cover and refrigerate for a minimum of 24 hours, if possible.
