Roasted Beets with Goat Cheese

Beets make a great go-to side dish for any meal but they're also great tossed into salads or as is the case with these beets, makes for a great starter.  This recipe isn't just delicious and healthy; it’s also really easy to make and if you roast and season the beets in advance the whole thing can be thrown together in just minutes.  

You may have had a similar version of this recipe at a restaurant at some point before. They've been gracing menus for quite some time now. They're definitely crave worthy, and once you try them you'll be wanting to make them again and again. Here is our version of them. The flavor of the goat cheese, pistachios, fresh chopped basil and hot honey all really bring out the earthy flavor of the roasted beets.  Hopefully you can find local honey to use. Here in Charleston we use Red Clay's Hot Honey for the honey in this recipe.  If you can't find hot honey where you are there are tons of recipes for DIY hot honey online.   As a side-note,  local honey is incredibly tasty since local honey contains a blend of local pollen. It can strengthen your immune system and reduce pollen allergy symptoms. We buy our local honey at our farmers market. Local honey vendors can usually be found in your local grocery stores as well. We like supporting local businesses also, so it's a win-win!  

Ingredients

 3 large beets, peeled
 1 tbsp extra-virgin olive oil
 ¼ cup goat cheese, crumbled
 ¼ cup dry roasted pistachio kernels, unsalted
 12 tbsp hot honey (such as Red Clay)
 flaky salt and fresh ground pepper
 1 tbsp fresh basil, chopped

Directions

Preheat the oven to 400 degrees. Remove the tops and the roots of the beets and peel each one with a vegetable peeler. Cut the beets in 1 1/2-inch chunks. (Small beets halved, medium ones cut into quarters, and large beets cut into eighths.) Place the cut beets on a baking sheet and toss with the olive oil, salt, and pepper. Roast for 30 to 35 minutes until the beets are tender, turning once or twice with a spatula. Remove from the oven.

Drizzle hot honey over top and garnish with crumbed goat cheese, pistachios, fresh basil and a sprinkle of salt and pepper and serve.

Leftovers keep well in the fridge for a few days.
