Ingredients

 4 cups rhubarb (about 4 large stalks), trimmed and chopped
 2 cups strawberries, hulled and chopped
  cup water
 1 lemon, zested and juiced
 2 tbsp honey

Directions

In a saucepan, combine the strawberries, rhubarb, and water. Stir well to combine.

Place the saucepan over medium heat and bring the mixture to a simmer. Add in the honey and mix well. Continue to stir occasionally to prevent sticking. Reduce the heat to low and let it cook for about 10 minutes, or until the fruit softens and breaks down. Add in the lemon juice and zest and stir. Remove the saucepan from heat.

Let the compote cool before transferring it to a jar or container. Store it in the refrigerator for up to one week.
