Summer in a Bowl Mango Quinoa Salad

One of many recipes inspired by a Summer trip to Greece. Stands well alone or served alongside a lean protein.Β 

Ingredients

 1 cup quinoa
 1 mango, peeled and chopped
 4 green onions, thinly sliced
  cup dried cherries or cranberries
 1 lemon, juiced
 1 tbsp honey
 2 tsp dijon mustard
 1 clove garlic, minced
 ¼ cup olive oil
 ½ shallot, diced
 ¼ cup almonds, roasted and chopped, optional

Directions

Cook quinoa according to package directions (1 cup quinoa to 1 3/4 c water). Let cool. Fluff with fork.

While quinoa is cooling, make shallot vinaigrette by whisking together the lemon juice, honey, mustard and garlic in mixing bowl. While whisking, slowly drizzle in the olive oil. Season to taste with salt and pepper and add in the shallots. Let sit.

Add cooled quinoa, mango, onions and cherries to a large bowl. Slowly stir in half the vinaigrette, adding more as needed. If desired, mix in roasted almonds before serving.

Any leftover vinaigrette may be stored in the fridge for up to a week.
