Ground Turkey Taco Salad

Delicious and Nutritious: Taco Salads, the perfect family meal!

Ingredients

Dressing
 ½ cup greek yogurt (unflavored)
  cup salsa
 1 tsp lime juice
Salad
 1 lb ground turkey meat
 2 tbsp taco seasoning
 2 heads romaine lettuce, washed and cut into bite size pieces (or more, depending on size)
 1 cup shredded carrots
 8 radishes, sliced
 1 bell pepper, sliced (any color except green)
 1 cup fresh or frozen corn
 1 can black or pinto beans (prepared)
 garnishes (shredded cheese, sliced avocado, hot sauce, olives, jalapeños, lime wedges)
 grapeseed or olive oil for cooking

Directions

In a small bowl, build the sauce first. Mix together the Greek yogurt, salsa, and lime juice and set aside. Store in the refrigerator if not eating immediately.

In a large skillet, with a small amount of oil added, cook the meat on medium heat until browned. Add the taco seasoning and 1/4 cup water and mix well. Continue to cook and stir until all the water is absorbed. Remove pan from heat.

With a small amount of oil, cook the corn in a small skillet on medium-hight heat, until heated and lightly browned. (Alternatively, you can grill the corn). Remove from the heat. Prepare the beans.

Build the taco salads by adding lettuce, taco meat, beans, radishes, carrots, peppers, corn and other desired toppings.
