Turkey Meatballs

Serve hot with your favorite pasta (gluten- free or regular) and a side vegetable. Maybe with broccoli rabe (blanched first in salted water) or broccolini, sautéed simply with a drizzle of olive oil or maybe try roasted spaghetti squash instead.  All are great choices.   Everyone loves meatballs for dinner - the perfect comfort food.

Ingredients

 1 small onion, roughly chopped
 2 garlic cloves,
 6 fresh basil leaves
 ¼ cup Italian parsley
 ½ cup arugula
 1 lb ground turkey
 ¼ cup breadcrumbs or panko, gluten free or regular
 1 egg
 1 tsp flaky sea salt
 fresh ground pepper
 extra- virgin olive oil for cooking
 24 oz favorite jarred marinara sauce (such as Rao's)

Directions

In a food processor pulse the onion, garlic, basil, parsley, and arugula until finely chopped. In a bowl, combine the onion mixture with turkey, egg, breadcrumbs, salt and a few grinds of fresh pepper; mixing with your hands. Roll the turkey mixture into golf ball-sized meatballs, setting on a plate or pan.

In a large nonstick skillet heat the oil over medium-high heat. Cook the meatballs in the skillet in batches, stirring until they're browned, around 10 minutes or so. - This is a great time to use a splatter screen.

In a large pot over low heat warm the marinara sauce. Transfer the meatballs to the sauce. Cook meatballs, stirring occasionally, for around 20-30 minutes.

Serve with accompaniments of your choice and enjoy!
