Veggie Breakfast Scramble

Thinking everyone knows how to prepare eggs but just in case not, here is a simple recipe for a veggie egg scramble. You can scramble your eggs prior to adding them to the heated pan, or can always crack the eggs directly into the pan and lightly scramble once they're in the pan. If just cooking a single order, the crack into method makes it quicker for sure.  Add any combination of veggies you like to your eggs taking advantage of seasonal  veggies. The cheese garnish is of course optional, but a nice addition! 

Ingredients

 2 fresh eggs, gently scrambled
 1 cup chopped vegetables (asparagus, peas, tomatoes, etc.)
 ½ tsp extra-virgin olive oil or butter
 flaky salt and fresh ground pepper
 cheese garnish optional (ricotta, grated parmesan, goat, etc)

Directions

Heat oil or butter in small nonstick skillet over medium heat. Add desired vegetables and sauté lightly for 1-2 minutes until cooked al dente. Remove veggies from skillet to plate.

Add eggs to pan and lightly stir while cooking until no liquid remains. Add vegetables back in, stir briefly, and remove from heat. Add a sprinkle of salt and pepper and optional cheese.
