Watermelon Mint Agua Fresca

Agua frescas, or translated to "fresh waters", are a tradition in Mexico and have become increasingly popular in the United States.  Typically, they are a combination of fruits, grains, flowers, nuts or seeds blended with sugar and water to make a refreshing and light non-alcoholic beverage.  They are delicious and definitely crave-worthy! 

A ripe watermelon is best when making this recipe. If your watermelon isn’t as sweet as you’d like, you can add honey or agave, but you really won't need additional sweetener if your watermelon is perfect. You may strain the pulp from the mixture if you desire, however the pulp is good for you and definitely recommended and preferred. You can make this drink with other melons and other varieties of fresh fruit as well, including mango, peaches, strawberries or pineapple. A Cucumber Agua Fresca is another option and delicious also!

Ingredients

 2 cups watermelon, seeded and cubed
 ¼ cup water
 ½ lime, squeezed
 2 tsp agave or honey (optional) may not be needed at all, if watermelon is really sweet
 6 mint leaves, divided
 ice cubes
 lime slices, for garnish

Directions

Add the watermelon, juice of 1/2 the lime, and the water to a blender and puree until smooth. Divide the mint leaves, sugar (if using) and lime slices among 2-3 glasses and muddle the ingredients. Add ice to each glass and pour in the watermelon agua fresco.

Stir and serve.
