White Bean and Mint Dip

White Bean and Mint Dip that's not just tasty but packs a punch of healthiness. Use it on bruschetta, as a veggie dip, or slather it on warm flatbread – or spread it on your favorite sandwich. It's loaded with garlic, lemon, and olive oil, making it guilt-free and flavor-packed. It's seriously good – who said healthy can't be downright delicious?  

Take this White Bean and Mint Dip to the next level by topping it with crumbled goat cheese – a nice touch that adds a creamy, tangy kick. And if goat cheese isn't your thing, go for feta instead for an equally great touch.

Ingredients

 3 cups white beans (Cannellini, Northern or other), rinsed and drained
 2 cloves fresh garlic, minced
 zest of 1 large lemon
  cup fresh lemon juice
 ¼ cup extra-virgin olive oil
  cup fresh mint, chopped
 flaky salt and fresh ground pepper, to taste
 goat cheese crumbles, optional garnish

Directions

Rinse and drain beans. Place beans, garlic, lemon, zest, and juice, and olive oil in a food processor. Purée until smooth, but slightly chunky. Season with salt and pepper, to taste. Fold in the chopped mint. Top with crumbled goat cheese.
